Sriracha Couscous with Blistered Peppers

  1. Preheat oven to 450 degrees F. Line a rimmed baking sheet with parchment paper or grease it with a little Pam.
  2. Slice peppers into strips then toss with olive oil, salt and pepper.
  3. Place in oven for 3545 minutes, or until skin is charred.
  4. While peppers are roasting, bring a pot of water to a boil and cook couscous according to package directions.
  5. Fluff, then toss with Sriracha sauce.
  6. Top with blistered peppers and enjoy.
