Sriracha Couscous with Blistered Peppers
- 1 whole Large Red Bell Pepper
- 1 teaspoon Olive Oil
- 2 pinches Salt And Pepper
- 1/2 cups Dry Couscous
- 3 Tablespoons Srircha Sauce
- Preheat oven to 450 degrees F. Line a rimmed baking sheet with parchment paper or grease it with a little Pam.
- Slice peppers into strips then toss with olive oil, salt and pepper.
- Place in oven for 3545 minutes, or until skin is charred.
- While peppers are roasting, bring a pot of water to a boil and cook couscous according to package directions.
- Fluff, then toss with Sriracha sauce.
- Top with blistered peppers and enjoy.
