California Endive Cups

  1. Slice grapefruit in half crosswise.
  2. Scoop between membranes with spoon to release grapefruit segments, and place in medium bowl.
  3. Squeeze juice from empty grapefruit half into second bowl.
  4. Repeat with remaining grapefruit.
  5. Add avocado and red onion to grapefruit segments.
  6. Add 2 Tbs.
  7. grapefruit juice, and toss.
  8. Season with salt and pepper.
  9. Spoon about 2 tsp.
  10. grapefruit filling in center of each endive leaf.
  11. Arrange on platter, and serve.
