Cilantro Cream

  1. Blanch and shock spinach.
  2. Squeeze out all water from spinach.
  3. Place spinach, cream, sour cream and cilantro in a food processor.
  4. Puree until smooth.
  5. Season with salt, L.A spice and lime juice.
