Eddie's Baked Soup Mix Chicken
- 3 boneless skinless chicken breasts
- 1 (1 7/8 ounce) envelope onion soup mix (I used Lipton's Onion Mushroom )
- 12 cup plain breadcrumbs
- 14 cup shredded sharp cheddar cheese
- 12 cup Egg Beaters egg substitute (I used Southwest Style )
- Preheat Oven to 375.
- In a bowl, combine packet of soup mix, breadcrumbs, and cheddar cheese.
- Pour Egg Beaters into a small bowl.
- Dip chicken into Egg Beaters, allowing any excess to drip off.
- Pat both sides of chicken in breadcrumb mixture.
- Add chicken to pan or baking dish and cook, uncovered, for 35 minutes or until chicken is cooked through.
- Enjoy :).
