Best Bran Muffins Recipe
- 3 c. bran (All Bran, 100% Bran) cereal
- 1/2 c. vegetable oil
- 1 c. raisins (I sometimes use more)
- 1 c. boiling water
- 2 Large eggs, lightly beaten
- 2 c. buttermilk
- 1/4 c. molasses
- 2 1/4 c. whole wheat flour
- 4 teaspoon brown sugar
- 2 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3 tbsp. wheat germ
- 3 bananas
- 2 c. granola (100% all natural cereal)
- 1 c. minced dry apricots (optional)
- 1 c. walnuts, coarsely cut (optional)
- In a large bowl, combine cereal, oil, raisins, and pour boiling water over mix.
- Allow to cold slightly.
- In a small bowl, combine Large eggs, buttermilk and molasses.
- Add in to mix.
- In another small bowl, combine flour, sugar, soda and salt.
- Add in to cereal mix, stirring just sufficient to moisten dry ingredients.
- Smush bananas (I think this is called puree).
- Add in bananas and the rest of ingredients to the batter, stirring just sufficient to mix well.
- Cover the batter with plastic wrap or possibly damp towel, and let stand at least 15 min, preferably 1 hour.
- Preheat oven to 400 degrees.
- Grease 24 muffin c. and fill about 3/4 full.
- Bake 20-25 min.
- Check after about 18 min.
- Remove from oven and allow to cold before removing from pan.
- Cold on rack.
