Cheeseburger & French Fry Soup
- 1 pound extra lean ground beef
- 1 large (1 cup) onion, chopped
- 1 cup matchstick-cut carrots
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons Land O Lakes Butter
- 2 tablespoons all-purpose flour
- 1 1/2 cups milk
- 1 (14.5-ounce) can chicken broth
- 8 (3/4-ounce) slices Land O Lakes Deli American, cut into quarters
- 2 tablespoons ketchup
- 1 tablespoon mustard
- Chopped dill pickles or dill pickle relish
- Shoestring potatoes
- Combine ground beef, onion, carrot, salt and pepper in 12-inch skillet; cook over medium-high heat 6-8 minutes or until meat is no longer pink.
- Drain, if necessary.
- Set aside.
- Melt butter in 3-quart saucepan until sizzling; stir in flour.
- Add milk and broth; cook over medium-high heat, stirring constantly, 7-9 minutes or until mixture comes to a boil.
