Caramelized Onion & Prosciutto Gluten Free Pizza
- 4- 1/2 ounces, weight White Rice Flour Plus More For Adjustments
- 1- 1/2 teaspoon Instant Yeast
- 1 teaspoon Granulated Sugar
- 1/4 cups Cornstarch
- 1/4 cups Tapioca Flour
- 2 teaspoons Xanthan Gum
- 3/4 cups Unsweetened Soy Milk Or Cow's Milk
- 1/2 teaspoons Fine Sea Salt
- 4 teaspoons Extra Virgin Olive Oil
- 2 teaspoons Apple Cider Vinegar
- 1 Tablespoon Extra Virgin Olive Oil
- 1 Tablespoon Unsalted Butter
- 1 teaspoon Minced Garlic
- 1 whole Large Onion, Chopped
- 1/2 cups Prosciutto Di Parma
- 1/4 cups Shredded Swiss Cheese
- 1/4 cups Gruyere Cheese
- Preheat the oven to 450 F.
- To prepare the crust, place rice flour, instant yeast, sugar, cornstarch, tapioca flour, xanthan gum, and 1/2 cup of milk in a food processor and pulse a few times.
- Add sea salt, olive oil, and vinegar into the mixture and run the food processor to low setting.
- With the processor running, add the rest of milk.
- Add additional tablespoons of flour, one at a time until it forms a dough.
- On a lightly oiled surface with some flour sprinkled over it, knead the dough lightly a few times with the palms of your hands.
- Leave the dough covered in a bowl or storage/freezer bag (closed) and set aside.
- Meanwhile, heat a saute pan with olive oil, butter, and garlic over high heat.
- Once the butter melts add onion and reduce the heat to medium.
- Saute until onion is golden, 15-20 minutes.
- Lightly oil a pizza pan.
- Place the dough on the pan.
- Press the dough to shape.
- Sprinkle additional flour on the dough surface if its sticking to your fingers/hands.
- Continue to shape until the dough becomes about 12 inch round.
- Pre-bake the dough at 450 F for about 12 minutes.
- Then remove it from the oven.
- Place caramelized onions, prosciutto, and cheese on the pre-baked pizza dough and bake again at 450 F for another 12-15 minutes or until cheese is melted.
- Remove from oven and cool slightly before serving.
- Side notes: You can use a regular pizza dough or even bread with this topping and still enjoy the same flavor.
