Breaded Fried Basa (Catfish) Fillets
- 1/2 cup all-purpose flour
- 1 egg, beaten
- 2 tbsp milk
- 1/2 cup Panko Japanese bread crumbs
- 2 tbsp Cajun spice mix or other favorite spice
- 2 basa fillets
- 1 Oil for frying
- Put flour into a shallow rectangle dish
- Combine bread crumbs and desired spice mix into another shallow rectangle dish.
- (If your spice mix doesn't have salt added, you could sprinkle some in the bread crumbs on the fish while cooking).
- Beat egg in a small mixing bowl.
- Add milk and beat some more.
- First coat both sides of each fillet with flour, then dip into the egg and milk mixture, then coat both sides in the bread crumbs.
- Heat oil in a large frying pan to medium-high.
- When oil is hot add the fillets to the pan, cook until just golden brown, then very carefully flip them over to the other side, and brown.
- Don't overcook or fish will be dry.
- You may want to use two spatulas to flip them over to prevent them from breaking.
- If desired, you can put them on paper towel lined plate to absorb access oil.
