Almond Joy Energy Bites

  1. Prepare a parchment paper lined baking sheet and set aside.
  2. In a large bowl add the oats, chia seeds, wheat germ and slivered almonds and mix together well.
  3. Add dates, coconut milk, almond butter, coconut oil, agave syrup, almond and coconut extract.
  4. Using your hands, mix everything together well.
  5. The warmth from your hands will help to melt the almond butter, creating the perfect consistency.
  6. Begin to create 1-inch balls and roll between your palms until they are perfectly ball-shaped, set on parchment paper.
  7. When all the energy bites are formed, roll in the coconut flakes and return to the parchment paper.
  8. Set aside.
  9. In a small microwave safe dish, microwave the chocolate for 60 seconds.
  10. Remove, add coconut oil and microwave for another 30 seconds.
  11. Remove and stir.
  12. Microwave in additional 30-second intervals as needed until smooth.
  13. Gently pour chocolate into the corner of a resealable bag.
  14. Snip a small piece off the corner and drizzle away.
  15. Add any leftover coconut flakes before the chocolate dries.
  16. Enjoy!
