Almond Joy Energy Bites
- 1 cup Oatmeal
- 1/4 cups Chia Seeds
- 1/4 cups Wheat Germ
- 23 cups Slivered Almonds
- 1 cup Dates, Chopped
- 1/2 cups Coconut Milk
- 1/4 cups Almond Butter
- 1 Tablespoon Coconut Oil, Melted
- 1/4 cups Agave Syrup
- 1 teaspoon Almond Extract
- 1 teaspoon Coconut Extract
- 2 Tablespoons Unsweetened Coconut Flakes
- 2 Tablespoons Dark Chocolate Chips (choose A Vegan Kind)
- 1/4 teaspoons Coconut Oil
- Prepare a parchment paper lined baking sheet and set aside.
- In a large bowl add the oats, chia seeds, wheat germ and slivered almonds and mix together well.
- Add dates, coconut milk, almond butter, coconut oil, agave syrup, almond and coconut extract.
- Using your hands, mix everything together well.
- The warmth from your hands will help to melt the almond butter, creating the perfect consistency.
- Begin to create 1-inch balls and roll between your palms until they are perfectly ball-shaped, set on parchment paper.
- When all the energy bites are formed, roll in the coconut flakes and return to the parchment paper.
- Set aside.
- In a small microwave safe dish, microwave the chocolate for 60 seconds.
- Remove, add coconut oil and microwave for another 30 seconds.
- Remove and stir.
- Microwave in additional 30-second intervals as needed until smooth.
- Gently pour chocolate into the corner of a resealable bag.
- Snip a small piece off the corner and drizzle away.
- Add any leftover coconut flakes before the chocolate dries.
- Enjoy!
