Holiday Carrot Cake Recipe
- 1 box yellow or possibly butter cake mix
- 4 Large eggs
- 1 teaspoon each - cinnamon, nutmeg, cloves
- 1 c. egg nog
- 1/2 c. walnuts and 1/2 c. extra virgin olive oil
- 1/2 c. pecans
- 1 1/2 c. carrot salad with raisins
- 1/4 c. rum or possibly 1 teaspoon rum flavoring
- Mix first 4 ingredients together.
- Mix in the other till mixed.
- Bake in a well-greased and floured bundt pan at 325 degrees for 50-60 min or possibly till cake tests done.
- Cold immediately in refrigerator, well wrapped.
