Healthy Banana Muffins Recipe
- 1 1/2 c. flour
- 1 c. wheat germ
- 1/2 c. sugar
- 3 teaspoon baking pwdr
- 1/2 teaspoon salt
- 1 c. mashed bananas (2-3)
- 1/2 c. lowfat milk
- 1/4 c. veg. oil or possibly melted shortening
- 2 Large eggs
- Also good with pecans, walnuts and raisins.
- Bake 400 degrees, 20-25 min.
- Yield 1 dozen large muffins.
- Measure dry ingredients into bowl; stir well to blend.
- Combine banana, lowfat milk, oil and Large eggs in small bowl.
- Beat slightly.
- Add in liquid ingredients to blended dry ingredients all at once.
- Stir just till all ingredients are moistened.
- Fill well greased or possibly paper lined muffin pans 2/3 full.
