Cappuccino Brownies

  1. Preheat oven to 350 degrees, Grease 8x8x2-inch baking pan.
  2. Melt the 1/2 cup butter and unsweetened chopped chocolate in a medium saucepan over low heat, stirring constantly.
  3. Remove from heat, cool slightly.
  4. Stir in granulated sugar.
  5. Add eggs one at a time, beating with a wooden spoon just until combined.
  6. Stir in vanilla.
  7. Stir together flour and baking soda in a small bowl.
  8. Add flour mixture to chocolate mixture and stir just until combined.
  9. Spread batter into prepared pan.
  10. Bake at 350F for 30 minutes.
  11. For topping:.
  12. Dissolve coffee crystals in 1 tablespoon of whipping cream.
  13. Beat together powdered sugar and the 2 tablespoons of butter in a small mixing bowl with an electric mixer on medium speed.
  14. Add whipping cream and coffee mixture and beat until creamy.
  15. If necessary, ad a little additional whipping cream until mixture is spreading consistency.
  16. Spread over the warm brownies.
  17. Chill about 1 hour or until topping is set.
  18. For Chocolate Frosting:.
  19. Combine 1 cup semisweet chocolate chips and 1/3 cup whipping cream in a small pan.
  20. Stir over low heat until chocolate is melted and mixture begins to thicken.
  21. Carefully spread over brownies.
