Scottish Hogmanay Rich Biscuits

  1. In medium bowl, beat egg whites until stiff.
  2. Fold in sugar and lemon flavoring.
  3. Beat egg yolks lightly and add to egg white mixture.
  4. Add flour and salt; stir to blend well.
  5. Drop batter onto buttered cookie sheets in 1 Tbsp.
  6. mounds.
  7. Leave room for cookies to rise and expand.
  8. Bake in 425 F. oven for 15 minutes or until lightly browned.
