Scottish Hogmanay Rich Biscuits
- 2 eggs, separated
- 1/2 cup granulated sugar
- 1 tsp. lemon extract
- 1/2 cup all purpose flour
- 1/4 tsp. salt
- In medium bowl, beat egg whites until stiff.
- Fold in sugar and lemon flavoring.
- Beat egg yolks lightly and add to egg white mixture.
- Add flour and salt; stir to blend well.
- Drop batter onto buttered cookie sheets in 1 Tbsp.
- mounds.
- Leave room for cookies to rise and expand.
- Bake in 425 F. oven for 15 minutes or until lightly browned.
- Makes 24 cookies.
