Hardy Vegetable Soup
- 4 quarts water
- 1 cup mixed vegetables
- 3/4 cup celery chopped
- 1/2 tablespoon basil sweet
- 3/4 cup onions chopped
- 1 x salt and black pepper to taste
- 2 each garlic cloves chopped
- 1/2 cup pasta, elbow macaroni
- 1 cup carrots sliced
- 1/2 cup pearl barley pot
- 2 cups potatoes diced
- 2 cups chicken beef,ham
- 2 tablespoons canola oil
- 2 cups cabbage coarsely chopped
- 1/2 cup tomato paste
- 1 each tomatoes chopped
- 1/2 cup green bell peppers diced
- In a soup pot saute the celery, onion and garlic in oil for 5 minutes.
- Add water, vegetables, pot barley, meats, seasonings.
- Bring to the boil and simmer for 1 1/4 hours.
- For last 1/4 hour add cabbage and macaroni.
