Bacon Fried Veggies w/ Spinach

  1. Cover carrots with cold water in a sauce pot.
  2. Add a pinch of sugar.
  3. Boil until carrots lighten in color, about two minutes after boil.
  4. Heat 2 tablespoons of bacon fat in a large saute pan.
  5. Add zucchini.
  6. Season.
  7. Drain carrots.
  8. Add to saute pan.
  9. Add butter and toss.
  10. Add spinach.
  11. Toss until just wilted, about 30 seconds to a minute.
  12. Variations; Vegetable oil, parsley, arugala, diced bacon, habanero, brown sugar, maple, asparagus, squash, sweet potatoes
