Apple Nut Pancakes (Vegan)
- 1 cup whole wheat flour
- 1 tablespoon whole wheat flour
- 1 tablespoon white sugar
- 1 12 teaspoons baking powder
- 18 teaspoon salt
- 1 teaspoon ground cinnamon
- 14 teaspoon nutmeg
- 14 teaspoon allspice
- 1 teaspoon vanilla extract
- 34 cup apple cider (or juice)
- 14 cup soymilk
- 14 cup pecans, chopped
- 1 granny smith apple, peeled cored and diced
- Stir together dry ingredients in a large bowl (flour through allspice).
- Make a well in the center and add vanilla, cider, and soy milk, stirring just until blended.
- Stir in nuts and apples.
- Heat a large skillet over medium heat and add oil or cooking spray.
- When hot, pour 1/3 cup batter on skillet.
- Cook until bubble appear and then flip.
- Serve warm with maple syrup or honey.
