Smoked Creole Prime Rib

  1. Mix Creole seasoning and rub prime rib.
  2. Wraps with plastic wrap and refrigerate 48 hours.
  3. Set up grill for Indirect Heat.
  4. Add a handful of wet Hickory wood chips directly to the hot coals and smoke at 350F.
  5. Cook to desired temperature.
  6. 135F Rare, 145F Medium Rare, 160F Medium.
  7. Let the Prime Rib rest 15 minutes or so before carving and serving.
