Smoked Creole Prime Rib
- 1 Prime Rib
- 2 tsp Paprika
- 2 tsp Lawry's Seasoned Salt
- 2 tsp Dried crushed oregano
- 1 tsp Brown sugar
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 1/2 tsp Cinnamon
- 1/2 tsp Black pepper
- 1/4 tsp Allspice
- 1/4 tsp Cayenne pepper
- Mix Creole seasoning and rub prime rib.
- Wraps with plastic wrap and refrigerate 48 hours.
- Set up grill for Indirect Heat.
- Add a handful of wet Hickory wood chips directly to the hot coals and smoke at 350F.
- Cook to desired temperature.
- 135F Rare, 145F Medium Rare, 160F Medium.
- Let the Prime Rib rest 15 minutes or so before carving and serving.
