Mincemeat Cake
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 12 teaspoon salt
- 8 tablespoons unsalted butter, at room temperature (1 stick)
- 12 cup light brown sugar, packed
- 14 cup granulated sugar
- 1 large egg
- 1 cup mincemeat (jarred)
- 1 cup walnuts, chopped
- Preheat oven to 325F Line a 9-inch round cake pan with parchment paper and butter the paper.
- Sift together the flour, baking powder, baking soda and salt.
- Set aside.
- Cream together the butter and sugars in a large bowl.
- Whisk in egg until well blended.
- Mix the dry ingredients, a little at a time, into the butter mixture, making sure each addition is fully incorporated before adding more.
- Stir in the mincemeat and walnuts, until evenly distributed.
- Spread batter into prepared pan and bake about 1 hour, or until knife inserted in center comes out clean.
- Cool slightly in pan on wire rack.
- Serve warm, with vanilla ice cream or a custard sauce, or plain like a snack cake.
