Chicken Nacho Skillet
- 1/4 cup (1/2 stick) butter
- 1 large onion, chopped
- 1 medium bell pepper, chopped
- 1/2 lb. fresh mushrooms, sliced
- 1 lb. chicken tenders Whole Foods 1 lb For $3.99 thru 02/09
- Creole seasoning
- 1 can (10 oz.) diced tomatoes & chilies, drained
- 1 pkg. (8 oz.) VELVEETA, cut up
- Melt butter in large skillet.
- Add onion, bell pepper, mushrooms and chicken tenders (seasoned with Creole seasoning).
- Cook until chicken is cooked through.
- Add tomatoes and VELVEETA.
- Cook until VELVEETA is melted, stirring frequently.
- Serve over hot cooked pasta or rice.
- Also good with cooked shrimp or crawfish instead of chicken tenders.
