Zucchini Raisin Bread
- 1 3/4 cups flour, all-purpose
- 13 cup sugar
- 1/2 cup bran
- 4 teaspoons baking powder
- 1 teaspoon cinnamon
- 1 cup zucchini shredded
- 13 cup water
- 1/4 cup applesauce
- 2 each egg whites
- 3/4 cup raisins, seedless
- In a med bowl, combine dry ingred.
- Stir in zucchini.
- In a sm.
- bowl, mix water, applesauce and egg whites.
- Add to flour mixture, mixing just until moistened.
- Stir in raisins.
- Spoon into a sprayed 8 x 4 inch loaf pan.
- Bake in a 350 deg.
- F. oven 50 -- 55 min or until golden brown.
- Cool 10 min.
- Remove from pan.
- Cool completely on a wire rack.
