Sweet Potato Souffle

  1. Drain the sweet potatoes and mix with the rest of the ingredients in a bowl beat until smooth and lump free.
  2. Pour into a 13 X 9 bake pan; cook at 350 for 35 minutes or until just barley firm.
  3. Serve warm out of the oven or cold.
  4. Note: For an extra kick add 1Tlbs.
  5. of rum or rum extract to mix.
