Oreo cheesecake cups

  1. Preheat oven to 275
  2. Line cupcake tin with 16 liners
  3. Place an oreo in the bottom of each liner
  4. Mix cream cheese until smooth.
  5. Mix in sugar until well incorporated.
  6. Add one egg at a time and mix well.
  7. Mix in vanilla, sour cream, and salt.
  8. Roughly chop remaining oreos and fold into batter by hand.
  9. Fill each cupcake liner to the top with batter.
  10. Bake for 22-25 minutes or until the batter is set.
  11. Cool completely on baking rack and then refrigerate in tins for at least 4 hours.
