Eggs Flamenco

  1. Heat the oil in a large 26cm frying pan over medium heat.
  2. Add the onion and capsicum and saute until almost tender.
  3. Stir in the salsa.
  4. Crack the eggs evenly spaced apart, into pan, then sprinkle over the cheese.
  5. Cover pan and cook 5-8 minutes until eggs are cooked to you liking and cheese has melted.
  6. Serve with crusty toast.
