Eggs Flamenco
- 1 tablespoon olive oil
- 1 large onion, finely chopped
- 1 green capsicum, roughly chopped
- 1 1/3 cups roast capsicum salsa
- 4 eggs
- 1/2 cup grated KRAFT Tasty Cheese
- crusty toast, to serve
- Heat the oil in a large 26cm frying pan over medium heat.
- Add the onion and capsicum and saute until almost tender.
- Stir in the salsa.
- Crack the eggs evenly spaced apart, into pan, then sprinkle over the cheese.
- Cover pan and cook 5-8 minutes until eggs are cooked to you liking and cheese has melted.
- Serve with crusty toast.
