Smoked Devilled Eggs
- 12 whole Hardboiled Eggs, Smoked
- 1/2 cups Mayonnaise
- 1 whole Medium Shallot, Minced
- 4 teaspoons Dijon Mustard
- 2 Tablespoons Diced Chives
- 8 slices Hot Pickles, Plus A Little Brine, Diced
- To smoke eggs, simply put peeled hardboiled eggs on the top grate of a smoker after any meat youre cooking is done.
- Smoke for 30-45 minutes, or until the eggs turn a gorgeous amber shade.
- Cut smoked eggs in half lengthwise, scoop the yolks into a small bowl and mash with a fork.
- Mix in the rest of the ingredients until thoroughly combined and creamy, then fill the egg whites with the mixture.
- These are also great with a little chipotle/adobo added to the yolks.
