Angel Of Mercy Cheese Recipe
- 1 head garlic, separated into cloves
- 8 ounce Ricotta cheese
- 4 ounce Gorgonzola cheese
- 1 c. Heavy cream
- 1/2 tsp Salt
- 4 x Fresh sage leaves Minced walnuts
- Cook garlic in microwave till tender (about 15 seconds).
- Mince in garlic press and measure 2 Tbsp..
- Beat ricotta om medium-sized bowl till softened.
- Add in gorgonzola and mix till smooth.
- Beat in cream, salt, and chopped garlic.
- Dampen 18-inch square piece of cheesecloth and place sage leaves bottom-side-up in a pattern in center of square.
- Spoon cheese mix over leaves.
- Tie ends of cloth together to create a ball shape.
- Place in cheesecloth-lined strainer and allow to drain for 24 hrs in the refrigerator.
- Unmold cheese on serving platter.
- Decorate with minced walnuts if you like.
- Serve at room temperature with an assortment of crackers.
