Berry Cheesecake Parfait
- 8 ounces cream cheese, lowfat, softened
- 1 12 cups cold skim milk
- 3 12 oz.vanilla flavor instant pudding mix
- 1 12 cups thawed light whipped topping, divided (cool whip)
- 24 vanilla wafers- low fat, coarsely chopped
- 1 12 cups mixed blueberries and sliced fresh strawberries
- sugar
- Sprinkle berries with your desired amount of sugar and set aside.
- Beat cream cheese with mixer until creamy.
- Gradually beat in milk.
- Add dry pudding mix; mix well.
- Whisk in 1 cup cool whip whipped topping.
- Layer half each of wafers, berries and pudding mixture in 8 parfait glasses.
- Repeat layers.
- Top with remaining whipped topping.
