Hummingbird Cake(4-H Champion)
- 3 c. flour
- 2 c. sugar
- 1 tsp. baking soda
- 3/4 tsp. salt
- 1 1/2 tsp. vanilla
- 3 eggs, beaten
- 1 c. vegetable oil
- 12 oz. drained crushed pineapple
- 1 c. chopped pecans
- 2 c. mashed ripe bananas
- Combine first 5 ingredients in a large mixing bowl; add eggs and oil, stirring until all dry ingredients are moistened.
- Do not beat!
- Stir in pineapple, 1 cup pecans and bananas.
- Spoon batter into 3 greased 9-inch round cake pans.
- Bake at 350u0b0 for 25 minutes or until toothpick comes out clean.
- Cool in pans 10 minutes; remove from pans and cool completely.
- Spread frosting between layers and on top and sides of cake.
- Sprinkle 1/2 cup chopped pecans on top.
- Yields 1 (3-layer) cake.
