Hummingbird Cake(4-H Champion)

  1. Combine first 5 ingredients in a large mixing bowl; add eggs and oil, stirring until all dry ingredients are moistened.
  2. Do not beat!
  3. Stir in pineapple, 1 cup pecans and bananas.
  4. Spoon batter into 3 greased 9-inch round cake pans.
  5. Bake at 350u0b0 for 25 minutes or until toothpick comes out clean.
  6. Cool in pans 10 minutes; remove from pans and cool completely.
  7. Spread frosting between layers and on top and sides of cake.
  8. Sprinkle 1/2 cup chopped pecans on top.
  9. Yields 1 (3-layer) cake.
