Breast Of Chicken With Green Peas And Spaghetti Recipe
- 4 boned chicken breast halves, cut into cubes
- 1 pound thin spaghetti, cooked and liquid removed well
- 1 c. cooked frzn (or possibly fresh) green peas
- 1/4 c. liquid from cooked peas
- 2 tbsp. extra virgin olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 tbsp. grated Parmesan cheese
- 1 egg
- After spaghetti is cooked and liquid removed, keep hot.
- Saute/fry chicken cubes lightly in extra virgin olive oil till golden brown.
- Season with salt and pepper.
- To the pan, add in cooked peas, along with the 1/4 c. liquid; simmer for 5 min and remove from fire.
- Next, beat Parmesan cheese into 1 egg and stir this into pan with the mix of chicken and peas.
- Lightly mix half of this mix into spaghetti.
- Serve topped with remaining chicken and peas.
