Apricot Meringue Bars Recipe

  1. Preheat oven to 350 degrees.
  2. Beat butter and 1/4 c. sugar till light.
  3. Beat in egg and vanilla.
  4. Combine flour and salt.
  5. Gradually add in dry ingredients to the butter mix.
  6. Pat into a 9-by-13-inch pan.
  7. Cover with apricot preserves.
  8. Beat egg whites till soft peaks form.
  9. Gradually add in remaining 1/2 c. sugar.
  10. When very stiff, add in pecan pcs.
  11. Spread over jam.
  12. Bake 35 to 40 min or possibly till hard.
  13. Yield: 24 squares.
  14. Tester's note: Easy to do; an elegant, fancy bar with an excellent taste and texture.
  15. I recommend cutting each square in half to make cookies into triangular shapes.
