Apricot Meringue Bars Recipe
- 1/2 c. Butter (1 stick)
- 3/4 c. Granulated sugar divided
- 1 x Egg
- 1/2 tsp Vanilla
- 1 1/4 c. All-purpose flour
- 1/8 tsp Salt
- 1 c. Apricot preserves
- 2 x Egg whites
- 1/2 c. Pecan pcs
- Preheat oven to 350 degrees.
- Beat butter and 1/4 c. sugar till light.
- Beat in egg and vanilla.
- Combine flour and salt.
- Gradually add in dry ingredients to the butter mix.
- Pat into a 9-by-13-inch pan.
- Cover with apricot preserves.
- Beat egg whites till soft peaks form.
- Gradually add in remaining 1/2 c. sugar.
- When very stiff, add in pecan pcs.
- Spread over jam.
- Bake 35 to 40 min or possibly till hard.
- Yield: 24 squares.
- Tester's note: Easy to do; an elegant, fancy bar with an excellent taste and texture.
- I recommend cutting each square in half to make cookies into triangular shapes.
