Banana Bran Bread
- 1 cup bran flakes
- 34 cup whole wheat flour
- 12 cup Splenda granular, sugar substitute
- 2 teaspoons baking powder
- 14 teaspoon bicarbonate of soda
- 2 egg whites
- 14 cup skim milk
- 2 tablespoons water
- 2 medium bananas
- Preheat oven to 180 degrees Celsius.
- In a large bowl, crush the bran flakes, I just crumble them in my hands, then add the rest of the dry ingredients and mix well.
- In a separate small bowl mash the bananas with the water then add the egg whites and milk.
- Mix these in well.
- Add the liquid mix to the dry ingredients and mix until a dough is formed.
- Spoon this into a greased loaf tin and bake for approximately 35 minutes or until a skewer inserted in the centre comes out clean.
