Meatless/Vegetable Curry Recipe
- 2 c. kidney beans, liquid removed
- 2 c. cooked brown rice
- 1 c. sliced carrots
- 1 c. sliced onions
- 1 c. sliced zucchini (or possibly other summer squash)
- 2 tbsp. butter
- 2 1/2 tbsp. flour
- 2 c. lowfat milk
- 3/4 c. instant lowfat milk
- 2 teaspoon curry pwdr
- 1 teaspoon honey (optional)
- Saute/fry vegetables till just tender.
- Make white sauce by melting butter.
- Add in flour and cook a few min.
- Slowly add in lowfat milk, stirring with a whisk.
- Add in instant lowfat milk, curry pwdr (to taste) and optional honey.
- Mix rice and beans and top with vegetables and then sauce.
- Add in condiments as desired.
