Amish Potato Salad
- 6 medium potatoes
- 1 small onions chopped
- 1 cup celery
- 1 teaspoon celery seeds
- 1 teaspoon salt
- 4 large eggs hard cooked, diced
- 2 large eggs
- 3/4 cup sugar
- 1 teaspoon cornstarch
- 1 x salt to taste
- 1/2 cup apple cider vinegar or less to taste
- 1 teaspoon dijon mustard
- 1/2 cup evaporated milk
- 3 tablespoons butter
- 1 cup mayonnaise
- Cook potatoes in their jackets until soft.
- Cool, peel, and dice.
- Mix potatoes gently with the next 5 ingredients; then add to the dressing.
- DRESSING:
- Mix Eggs with sugar, cornstarch and salt.
- Add vinegar, cream and mustard.
- Cook until thickened.
- Remove from heat and beat in butter.
- Add mayonnaise and mix until smooth Add potato mixture to the cooled dressing, folding gently together.
