Easy Bean Burritos
- 6 burrito-size (10-inch) flour tortillas
- One 16-ounce can spicy vegetarian refried beans
- Finely shredded lettuce
- 2 to 3 medium finely diced tomatoes
- 1 cup grated cheddar or Monterey Jack cheese, or cheddar- or Jack-style soy cheese, optional
- Preheat the oven or toaster oven to 400F.
- Wrap the entire batch of tortillas in foil and warm while you prepare the filling.
- Combine the refried beans with 1/4 cup water in a saucepan and heat slowly until hot, stirring occasionally.
- Transfer to a serving container.
- Place the lettuce and cheese into separate bowls.
- Have everyone make his or her own burritos as follows: Spread some of the refried beans down the center of each tortilla, followed by a sprinkling of lettuce, tomatoes, and the optional cheese.
- Roll up snugly and eat out of hand.
