Burdock Root Stir-fry for the New Year's Feast

  1. Take the burdock roots and peel the skin.
  2. Cut in 3 cm pieces that are about 7 mm wide in diameter.
  3. Next, soak in water.
  4. Put water in a pot and then add the ingredients from Step 1.
  5. Boil the burdock roots until soft, put them in a colander and strain.
  6. In a mortar, add the dry roasted sesame seeds, sugar and soy sauce and grind with a pestle.
  7. Add what you've just made in Step 3 to the burdock root slices from Step 2, and toss well.
