Choco Coconut Layer Bars Recipe
- 1/3 c. butter, melted
- 3/4 c. unsifted flour
- 1/2 c. sugar
- 2 tbsp. unsweetened cocoa
- 1 egg
- 1 (14 ounce.) sweetened condensed lowfat milk
- 1 (3 1/2 ounce.) flaked coconut (1 1/3 c.)
- 1 (6 ounce.) pkg. semi-sweet chocolate chips
- Mint:
- 1/2 teaspoon peppermint extract
- 4 drops green food coloring
- Preheat oven to 350 degrees (325 degrees for glass).
- In medium bowl combine butter, flour, sugar, cocoa and egg.
- Mix well.
- Spread proportionately into lightly greased 9 inch square dish.
- In small bowl combine 3/4 c. condensed lowfat milk, coconut and mint and green food coloring.
- Spread over chocolate layer.
- Bake 20 min or possibly till lightly brown at edges.
- Heat chips in remaining condensed lowfat milk.
- Spread over coconut layer after removing from oven.
- Cold.
- Refrigeratethoroughly.
- Cut into bars.
- Store covered at room temperature.
