Creamy Broccoli Quiche

  1. Preheat oven to 375 degrees Fahrenheit
  2. To prepare crust combine flour, salt and chilled lard in a small bowl.
  3. Cut lard with a pastry blender or 2 butter knives into the size of small peas.
  4. Add ice water to mixture and stir with a fork until mixture forms a ball and comes away from the sides of the bowl.
  5. On a flat surface dusted with flour roll out the dough to fit a 9" pie plate and then trim the edges of crust and then flute the edges around the plate.
  6. Put aside
  7. Cook broccoli florets in boiling salted water for 5 to 7 minutes just until tender.
  8. Remove from heat and drain through a colander.
  9. Put aside
  10. Fry onion in canola oil and cook until translucent.
  11. Allow to cool
  12. When chopped onion has cooled spread it on the bottom of pie plate to cover the surface entirely
  13. Sprinkle grated cheese over top of onion and then spread sausage slices over top of cheese
  14. Assemble broccoli florets over grated cheese covering the entire surface
  15. In a large bowl combine cream, eggs and salt together.
  16. Whip with a wire whisk until light and frothy
  17. Add dry ingredients to wet mixture and stir until batter is smooth and free of lumps
  18. Pour creamy sauce over top of all ingredients in pie plate and allow sauce to reach the edges of the plate
  19. Bake in preheated oven for 30 to 35 minutes until lightly browned
  20. Remove from oven and allow to cool before slicing into wedges.
  21. Serve with a green salad as a main course dish.
