Red Curry Shrimp With Baby Corn

  1. In large skillet, het oil over medium heat.
  2. Add broccoli and red papper.
  3. Stir fry 2-3 minutes.
  4. Add shrimp.
  5. Stir fry until they just begin to turn pink, about 1 minute.
  6. Add baby corn, red curry paste, fish sauce and coconut milk.
  7. Mix together well.
  8. Simmer until shrimp are cooked, about 1-2 minutes.
  9. Serve over jasmine rice.
