Packed With Sweet Potatoes! Sweet Potato Cake
- 250 grams Sweet potatoes (after peeling)
- 200 ml Vegetable based whipped cream (or heavy cream)
- 1 Egg
- 20 grams Sugar (adjust amount to your preference)
- 50 grams Pancake mix
- 1 optional, (to taste) Powdered sugar (for decoration)
- Peel the sweet sweet potatoes and cut into small pieces.
- Wrap and heat in the microwave until soft.
- Put the softened sweet potatoes into a bowl, mash, and let cool.
- Add the whipped cream (liquid form is okay), egg, and sugar and whisk together in a circular motion.
- Add the pancake mix and use a rubber spatula to mix.
- Line the cake pan with kitchen parchment paper and pour the batter into the pan.
- Bake in an oven preheated to 170F Celsius for 40~45 minutes.
- The cake is done when a toothpick or skewer inserted into the center comes out clean.
- Once cooled, dust with powdered sugar to finish (optional).
