Packed With Sweet Potatoes! Sweet Potato Cake

  1. Peel the sweet sweet potatoes and cut into small pieces.
  2. Wrap and heat in the microwave until soft.
  3. Put the softened sweet potatoes into a bowl, mash, and let cool.
  4. Add the whipped cream (liquid form is okay), egg, and sugar and whisk together in a circular motion.
  5. Add the pancake mix and use a rubber spatula to mix.
  6. Line the cake pan with kitchen parchment paper and pour the batter into the pan.
  7. Bake in an oven preheated to 170F Celsius for 40~45 minutes.
  8. The cake is done when a toothpick or skewer inserted into the center comes out clean.
  9. Once cooled, dust with powdered sugar to finish (optional).
