Triple Chocolate and Orange Muffins
- 1 orange
- 1 egg
- 12 cup canola oil
- 12 cup low-fat milk
- 14 teaspoon salt
- 12 cup sugar
- 14 cup dark chocolate chips
- 14 cup white chocolate chips
- 14 cup cocoa powder
- 1 12 cups self-raising flour
- Preheat oven to 190C.
- Blitz the whole orange, cut into smaller chunks, in a blender or food processor.
- Add the egg, oil milk salt and sugar and mix together well in a large bowl.
- Sprinkle in the chocolate bits and cocoa and stir until evenly mixed.
- Sift and sprinkle it over the top of the other ingredients then fold it in without over-mixing, stopping when there are no streaks or pockets of flour visible.
- Spoon into a regular muffin pan which has been thoroughly sprayed with non stick spray.
- Bake for 15-20 mins or until the tops spring back when lightly touched.
- (cooking time varies from oven to oven and with the size of the muffins) Leave to stand 2-3 minutes in their pans, then remove carefully and cool on a rack.
- These muffins freeze well.
