Triple Chocolate and Orange Muffins

  1. Preheat oven to 190C.
  2. Blitz the whole orange, cut into smaller chunks, in a blender or food processor.
  3. Add the egg, oil milk salt and sugar and mix together well in a large bowl.
  4. Sprinkle in the chocolate bits and cocoa and stir until evenly mixed.
  5. Sift and sprinkle it over the top of the other ingredients then fold it in without over-mixing, stopping when there are no streaks or pockets of flour visible.
  6. Spoon into a regular muffin pan which has been thoroughly sprayed with non stick spray.
  7. Bake for 15-20 mins or until the tops spring back when lightly touched.
  8. (cooking time varies from oven to oven and with the size of the muffins) Leave to stand 2-3 minutes in their pans, then remove carefully and cool on a rack.
  9. These muffins freeze well.
