Best Rhubarb Tart

  1. Preheat oven to 450F.
  2. Put bottom pie crust in pie plate, do not trim.
  3. Combine sugar and flour.
  4. Sprinkle 1/4 mixture over bottom crust.
  5. Heap rhubarb over mixture.
  6. Sprinkle remaining mixture over rhubarb and dot with small pieces of butter.
  7. Fold crust inward.
  8. (You could also add a top crust and just make it a pie, but I like a little of the rhubarb to be lightly browned.

  10. Place pie on lowest oven rack.
  11. Bake for 15 min., then reduce temperature to 350F and continue baking for 40-45 minute You may want to rim the crust with foil when you reduce the temperature (easier to do if you pre-make the foil pieces before putting the pie in the first time).
