Cheesy Crab-Stuffed Potatoes

  1. Scrub potatoes thoroughly.
  2. Rub skins with oil.
  3. Bake at 400u0b0 for 1 hour, or until done.
  4. Allow potatoes to cool to touch.
  5. Cut potatoes in half lengthwise.
  6. Carefully scoop out pulp, leaving shells intact.
  7. Spoon pulp into a mixing bowl.
  8. Add remaining ingredients, except paprika.
  9. Mash with a potato masher.
  10. Stuff shells with potato mixture; sprinkle with paprika.
  11. Bake at 425u0b0 for 15 to 20 minutes.
  12. Makes 8 servings.
