Whole Wheat Banana Muffins Recipe
- 3/4 c. + 2 tbsp. flour
- 1/4 c. whole wheat flour
- 1 1/2 ounce. bran flakes cereal
- 1 teaspoon baking pwdr
- 1/4 teaspoon baking soda
- 1/8 teaspoon grnd allspice
- 1 1/2 very ripe med. bananas
- 1/2 c. buttermilk
- 1 egg
- 2 tbsp. brown sugar
- 2 tbsp. + 2 teaspoon vegetable oil
- 1 teaspoon vanilla
- 4 pitted dates, minced
- Preheat oven to 375 degrees.
- Combine flours, cereal, baking pwdr and soda and allspice.
- Set aside.
- Process bananas, buttermilk, egg, sugar, oil and vanilla till smooth.
- Add in dry ingredients and mix till combined.
- Grease 8 (2 1/2") muffin tins.
- Fill with batter, fill empty c. with water.
- Bake 20 min.
- Let cold.
- 185 calories per muffin.
