Cheesy Baked Rice
- 2 eggs, slightly beaten
- 3/4 cup evaporated milk diluted with 2/3 cup water
- 2 cups cooked rice
- 1/2 lb. VELVEETA, cut up
- 1 tsp. salt
- 1/8 tsp. pepper
- 3 Tbsp. chopped pimento
- Pour all ingredients mixed together into a lightly greased 1-1/2-quart casserole dish.
- Bake at 350F for 55 to 60 minutes or until knife inserted in center comes out clean.
- Serves 6.
