Sole With Mushrooms, Lemon And Parmesan Cheese
- 8 small sole fillets (1 1/4 lb.)
- 1 medium onion, finely chopped
- 1/4 c. fresh chopped parsley
- 1 1/4 c. sliced mushrooms, fresh
- 4 Tbsp. margarine
- 1/4 tsp. crushed thyme
- salt and pepper to taste
- grated lemon peel
- dash of nutmeg
- 1/4 c. dry white wine
- 1/2 c. skim milk
- 1 Tbsp. flour
- paprika
- Parmesan cheese
- Saute onion, parsley and mushrooms in 3 tablespoons margarine. Stir constantly until onions become soft.
- Mix in thyme.
- Place fillets in greased baking dish; pour sauteed ingredients over fish. Sprinkle with salt, pepper and lemon peel to taste.
- Pour wine over all.
- Dot with remaining margarine.
