Healthful Date Bread Recipe
- 1 (8 ounce.) pkg. pitted whole dates, snipped (not sugared)
- 1 c. raisins
- 1 1/2 c. boiling water
- 2 c. whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon baking pwdr
- 1/4 teaspoon salt (opt.)
- 2 slightly beaten egg whites
- 1 teaspoon vanilla
- 1/2 c. minced almonds
- In a medium bowl combine dates and raisins.
- Pour boiling water over mix.
- Set aside to cold slightly.
- In large mixing bowl stir flour, baking soda, baking pwdr and salt.
- Stir egg whites and vanilla into cooled date mix.
- Add in date mix and almonds to flour mix; stir till well blended.
- (Mix will be thick.)
- Proportionately spread in a lightly greased 9 x 5 x 3 inch baking pan.
- Bake in 350 degree oven for 40 to 50 min or possibly till a wooden toothpick inserted in center comes out clean.
- Cold in pan 10 min.
- Remove from pan; cold thoroughly on a wire rack.
- Wrap and store overnight before serving.
- Makes 1 loaf, 18 servings.
