Nancys Pork Chops
- 1/2 pounds Bacon, Cut Into Small Pieces
- 1 whole Onion, Chopped
- 2 cans Cream Style Corn, 15 Oz. Each
- Fresh Ground Pepper
- 6 pieces Bone-in Pork Chops
- 1/2 bags Herb Seasoned Stuffing Mix (14 Oz Bag)
- Preheat oven to 300 degrees (F).
- In a large skillet, over medium heat, cook bacon until it is just about crisp.
- Spoon out some of the excess bacon drippings into a cup, set aside.
- Discard the rest of the grease.
- Add chopped onion to the bacon and saute until the onion is translucent and just about brown.
- Stir in the 2 cans of cream style corn and add a couple grinds of fresh pepper.
- Stir until well combined.
- Pepper the pork chops and arrange in a 9x13 pan.
- Spoon the corn/onion/bacon mixture over the top of the pork chops.
- Wipe out the skillet with a paper towel.
- Add the reserved bacon drippings to the pan and heat for a minute over medium heat.
- Add the stuffing mix and toss to coat.
- Evenly cover the pork chops with the stuffing.
- Bake for 2 hours.
- Serve.
