Nancys Pork Chops

  1. Preheat oven to 300 degrees (F).
  2. In a large skillet, over medium heat, cook bacon until it is just about crisp.
  3. Spoon out some of the excess bacon drippings into a cup, set aside.
  4. Discard the rest of the grease.
  5. Add chopped onion to the bacon and saute until the onion is translucent and just about brown.
  6. Stir in the 2 cans of cream style corn and add a couple grinds of fresh pepper.
  7. Stir until well combined.
  8. Pepper the pork chops and arrange in a 9x13 pan.
  9. Spoon the corn/onion/bacon mixture over the top of the pork chops.
  10. Wipe out the skillet with a paper towel.
  11. Add the reserved bacon drippings to the pan and heat for a minute over medium heat.
  12. Add the stuffing mix and toss to coat.
  13. Evenly cover the pork chops with the stuffing.
  14. Bake for 2 hours.
  15. Serve.
