spicy southwestern corn

• 2 tbsp oil
• 1 medium onion, chopped
• 1 poblano chile, chopped
• 1 1/2 cup corn
• 1 small zucchini, chopped
• 2 tsp chili powder
• 1/2 tsp salt
• 1/4 tsp pepper
• 1 tbsp lime juice

1. cook onion & chile in oil over med-high heat 2 min.
2. add corn & zucchini, cook 2-3 more min.
3. stir in remaining ingredients.
