Simmered Beef and Burdock Root (Shigure-ni)

  1. Cut the beef into bite sized pieces.
  2. Scrub the burdock root with a nylon vegetable brush or similar to remove any dirt, and slice very thinly on the diagonal with a vegetable slicer.
  3. Put the burdock root and the A ingredients in a pan, and simmer over medium heat for 3 minutes.
  4. Skim off any scum.
  5. Add the beef, and simmer over low heat until there's no moisture left in the pan.
  6. It's done when there's no moisture left in the pan.
  7. It burns easily so watch it carefully.
