Wild Rice & Turkey Salad with Raspberry-Orange Vinaigrette
- 2-1/2 qt. KRAFT FREE Raspberry Vinaigrette Fat Free Dressing
- 1/4 cup grated orange zest Safeway 1 lb For $0.79 thru 02/09
- 3 gal. prepared long grain and wild rice blend
- 50 each medium seedless oranges, peeled, sectioned Safeway 1 lb For $0.79 thru 02/09
- 1-1/2 gal. LOUIS RICH Turkey Bulk Oven Roasted, cubed
- 2-1/2 qt. dried cranberries
- 3-1/4 cups raisins
- 3-1/4 cups green onions, sliced
- 3-1/4 cups chopped pecans, toasted
- 100 each leaf lettuce leaves
- Mix dressing and orange zest; cover.
- Refrigerate until ready to use.
- Mix rice blend with orange sections, turkey, cranberries, raisins, onions and pecans.
- Cover and refrigerate until ready to serve.
- For each serving: Line carry-out container with 2 lettuce leaves; top with 2 cups of the turkey salad.
- Place 3 Tbsp.
- of the dressing mixture in portion cup; seal top.
- Place in salad container; close container lid.
- Refrigerate until ready to serve.
