Burrito Pie

  1. Preheat oven to 350 degrees F.
  2. Saute green peppers and onion until just tender and they have gotten a little browned.
  3. Remove from heat.
  4. Combine beans, chicken, sauted green peppers/onions, red pepper flakes, chili powder, garlic powder and 1/2 cup of the shredded cheese in a bowl.
  5. Stir to combine all the ingredients.
  6. In a hot nonstick skillet, lightly crisp the tortillas on each side.
  7. This will keep the pie crust remaining firm when you add the filling and bake.
  8. Spray a pie plate with cooking spray and place one of the tortillas in the bottom.
  9. Divide the bean/chicken mixture evenly and place half of it on the first tortilla.
  10. Place the second tortilla on top of this mixture and top with the other half of the bean/chicken mixture.
  11. Place the last tortilla on the top.
  12. Take the remaining 1/2 cup of cheese and evenly spread it over the tortilla.
  13. Bake for approximately 20 minutes.
  14. Top with your favorite salsa or sour cream.
  15. Serves 6.
